Eggplant is a spongey fruit that soaks up whatever flavor it is cooked with and becomes softer and meatier the longer it is cooked. Naturally, it has smokey undertones and can be a bit bitter. Typically used cooked.


Eggplants are associated with the potential to reduce high blood pressure and having antiobesity effects.
