Endive appears like lettuce, though is usually far more bitter. It’s the frilly leaf version of escarole. Typically used fresh or cooked.


One cup of endive contains 289% of the daily vitamin K requirement, 43% of the daily recommended need a vitamin A, and 35% of the daily recommended need of folate.
